TACO BELLE

I'm a little late, but happy Cinco de Mayo! I'm all for a day that promotes tacos and tequila- I mean, a day that celebrates the Mexican army defeating the Frech in the Battle of Puebla!

But since you mentioned tacos...

BEACH, PLEASE

Though I wore a sweater today, we're teetering right on the tip of summer here in Oklahoma. Warm temps have been teasing me and bright colors have been tempting me! Charming Charlie has been tempting and teasing me too, with tons of terrific tropical pieces. We're talking fun florals, cheery colors, and beaky birds that make me want to head straight to the beach (or at least the pool).

SUNDAY BRUNCH

Though I don't usually eat it in the a.m., breakfast is arguably my favorite meal. Eggs, potatoes, and I get along extremely well. Mornings and I, however, do not jive. I find myself making breakfast foods for lunch on my days off and breakfast for dinner fairly regularly.

Additionally, eggs and avocados are two of my absolute favorite foods. I enjoy them in almost any fashion. They are rich, creamy, and flavorful. They are also packed full of protein and healthy fats, which has become more important to me since the husband and I went pescatarian about two months ago. I love when these two ingredients can star in my brunch or brinner.

With that said, I jumped at the chance to prepare this recipe when I saw it on Damn Delicious.

THAI GAME

Hey y'all. Long time no blog. I've been spending most of my free time outdoors and away from my computer, enjoying this beautiful weather we've been having! Plus, I have seriously been procrastinating on this post... As I expected, this dish is way easier to make than it is to write about. Thai fried rice is in my regular meal rotation. It is quick, easy, fragrant, and flavorful. Though the ingredient list is long, I usually have most of these ingredients in my pantry. It is vegetarian (though it is also tasty with chicken or shrimp) and gluten free (if made with tamari). You can easily modify this recipe to suit your needs.

IN QUESO EMERGENCY

I was wandering the aisles at Walmart when I came across these Huy Fong Sriracha Diced Tomatoes & Red Chilies. I was instantly curious AND they were on sale! I did not have a purpose in mind for them, but I impulsively purchased them. I knew I could put them to use, one way or another!

CH-CH-CH-CHOKER FACE

When chokers came back on the scene last season, I was not a fan. However, I'm a slave to trends and I soon found myself head over heels for the neck decorations. I'm especially fond of simple, dainty chokers made of ribbon or lace. A plain piece of ribbon or lace suspended between some hardware runs between $10 and $15 at Charming Charlie and between you and me, that's highway robbery. Here's how to make your own for a fraction of that cost.

CACTUS CRAZED

As an Arizona native, I can't help but gravitate towards cacti. They are my favorite trend for spring, and I am perhaps a little obsessed. I've purchased at least three-quarters of the cactus-themed merchandise at my Charming Charlie and I thought you might like to see my cacti collection...
