These cupcakes are certainly not groundbreaking. They have been around for decades. My mother introduced me to these treats and her mother introduced them to her. However, if you have not made them, it is time to do so. These come together easily and deliciously every time. I have put a small spin on them here using dark chocolate cocoa powder and chocolate chips, but they are just as lovely with milk chocolate.
Please note, many of my recipes are gluten free but this one IS NOT. It could easily be made gluten free with GF AP flour, apple cider vinegar, and pure vanilla extract. I have made them gluten free before and they still came out great!
Here is what you need to make my Dark Chocolate and Cream Cheese "Cow" Cupcakes:
1 (8 ounce) package of cream cheese, softened
⅓ cup sugar
Pinch of salt
Approximately 10 ounces Nestle Toll House Dark Chocolate Morsels
1 cup sugar
1 ½ cups flour
⅓ cup Hershey’s Special Dark Cocoa
1 teaspoon baking soda
½ teaspoon salt
1 cup water
½ cup oil
1 tablespoon white vinegar
1 teaspoon imitation vanilla extract
First, preheat your oven to 350 degrees.
Combine cream cheese, egg, ⅓ cup sugar, and pinch of salt in a bowl. Mix with a mixer until creamy and well combined.
Add chocolate chips to the cream cheese mixture and set the bowl aside.
In a separate bowl, combine all remaining ingredients. Stir until clumps are gone and batter is smooth.
Fill muffin tin with paper liners. Fill each cup ⅓-½ way full of chocolate batter.
Then, drop a large dollop of cream cheese mixture into each cup.
Bake at 350 for 20-25 minutes.
Allow the cupcakes to cool slightly before attempting to remove them from the muffin tin!
My mother likes to dip them in sugar while they are still warm but cool enough to touch. I don't think they need it!
This recipe will make about 16-20 cupcakes, so you may need to repeat the filling and baking processes after your pan cools if you are totally lame and only have one muffin tin like me.
